Rustic French cuisine with rotisseried meats and fresh seafood in Amara Hotel

Despite being named after the elaborate and opulent stylings of this establishment’s namesake period, Bar-Roque Grill opts for more muted interiors that subtly blend stone, wood and leather in their 90-seater for a look of rustic sophistication. The eclectic but tasteful mixture of styles, chosen by co-owner Kori Miller (former GM of Sky on 57), is likewise reflected in its French-inspired menu by her partner, chef Stephane Istel (formerly of db Bistro Moderne), which combines traditional cooking methods with the innovative use of ingredients. 

Highlights include their free-range chicken ($20/half, $38/whole) and Australian pork knuckle ($58, feeds two), both prepared in the rotisserie, the seafood platter ($88) with oysters and fresh catches of the day and Istel’s tarte flambée ($12-$20), all prepared in their open kitchen.

If you prefer more attention from those preparing your food, book a seat at the chef’s table where you’ll get to choose from daily specials and have the unique opportunity to interact with chef Istel himself. The restaurant is well-placed for the Tanjong Pagar CBD crowd, with lunch sets on offer (from $32) and a large outdoor terrance for after-work drinks. Look out for the Butchers’ Sunday Rotisserie ($78), where chef Istel serves up a special selection of prime cuts from the rotisserie.
