Helmed by chef Tomoo Kimura, an alumnus of one-Michelin-starred Sushi Ichi and Hashida, Sushi Kimura is an intimate omakase restaurant with just 12 counter seats and two private rooms that seat roughly the same number.

Chef Kimura’s omakase sushi experience is the real draw here – prices range from $180 to $450 for lunch and $330 to $450 for dinner. Despite the hefty price tag, we still think the experience was worth every dollar.

Special attention is paid to every detail, right down to the basic ingredients like rice, vinegar, nori and water used in cooking. Chef Kimura only uses organic sushi rice from a specific farm in Yamagata Prefecture, cooked in Hokkaido spring water, and the fish he uses are flown in exclusively from small farms in Japan. While the sushi is a highlight, other dishes like the abalone cooked in sake for eight hours and his rice bowl topped with uni, chopped toro, ikura, also deserve a special mention.
