From sushi to ‘seviches’, every dish promises an innovative riot of flavours that packs a punch. The menu includes favourites such as seared foie gras ($38) and char siu-inspired kurobata pork belly ($68), as well as two SAMBA roll exclusives ($38): the SAMBA Singapore Roll with Maine lobster, mango, and avocado, and the SAMBA Chilli Crab Roll with crispy soft-shell crab, chilli crab sauce and yuzu mayo. There’s also a whole bunch of sharing plates perfect for catching up with your crew.

Wine connoisseurs will appreciate the extensive list, expertly guided by a sommelier, while sake enthusiasts will be delighted by the city’s most comprehensive selection, including premium Junmai Daiginjo.

2. Sky-high dining with 360-degree views

A lush oasis in the sky, SUSHISAMBA Singapore offers panoramic views of the city skyline and the sea, where its floor-to-ceiling windows frame the cityscape like a masterpiece. The magic hour truly unfolds at sunset, when the space is bathed in a mesmerising golden glow that ignites the room’s vibrant hues of orange, yellow, and green. Come nightfall, let the city lights become your stunning backdrop. There are also three private dining rooms – a nod to Japan, Brazil, and Peru – that offer stunning views of the Singapore Straits.

3. Multisensorial experience in luxe interiors

The 12,000 sqft space wows in its own right. Echoing the cuisine, the interiors embody the Japanese, Brazilian, and Peruvian style and spirit. Its theatrical design is immediately apparent, with a dramatic 3D-printed bamboo installation, meticulously crafted from over 9,000 Dubai-imported pieces. Polished wood and marble floors and lush greenery create a rainforest-inspired ambiance, while dramatic lighting spotlights the theatre-style open kitchen starring a robata counter with a charcoal grill and Josper oven, and a sushi counter with a Tsukiji Seafood Market corner. Feel the carnival heat throughout the Dining Room, Lounge, and Bar with in-house performers including DJs spinning a fiery blend of Afro-house, Brazilian, and Latin rhythms, percussionists serving up captivating beats alongside saxophonists. For a more exclusive experience, take the corner stairway to the SAMBA Room, a private space perfect for parties and intimate gatherings.
