To say that table65 has big shoes to fill would be a severe understatement. Chef Richard van Oostenbrugge’s first restaurant in Singapore takes over the space left by Joël Robuchon, our city’s only three-Michelin star restaurant. But that doesn’t seem to have deterred the Dutch chef who helms one-Michelin-starred Restaurant 212 in Amsterdam. He’s injected the venue with a massive open kitchen and table65 is bursting with reinvigorated energy. In 2019, the restaurant managed to obtain its first Michelin star within a year of its opening. 

Be wowed from the moment you sit at the counter where a light projection welcomes you to the restaurant alongside bites of breadsticks and mushroom soil. A five-course Discovery Menu is priced at $148 while the eight-course Experiential Menu goes for $218. With either option, you’re treated to culinary theatre with a capital T. Think a bowl of Beluga caviar from Iraq placed before you as the chef proceeds to pile it on top of a nori ravioli of Belon oyster. Then there’s the smoked turbot that’s covered with a flurry of black truffles that come in the size of your fist. And of course, a meal here wouldn’t be complete without the taste of Oostenbrugge’s signature apple dessert – a ginger-poached Granny Smith sorbet encased in a sugared shell that sits pretty on top of a puff pastry and walnut crumble.
